Healthy Homemade Peanut Butter & Banana Cups

So I hope you're in the mood for a nice healthy and delicious simple recipe today!  My friend Laura and I made these yesterday, and I thought I'd share! I don't want to ramble on too much so I'll just get right into it. This is a recipe for healthy peanut butter and banana cups. They're much healthier than the Reese peanut butter cups or other kinds and you know exactly what's in them and what you're eating if you make them yourself. Let's begin!

First of all, we need some chocolate, and for this recipe Laura and I used 70% cocao for the sake of being as healthy as possible without sacrificing taste. You can pick this up anywhere or try going to a bulk food store if you want to make a lot for a cheap price.


We basically melted the chocolate in a microwave safe glass measuring cup on the .5 defrost setting for 30 second increments. After every 30 seconds, we would take it out and stir, until it was the perfect melted consistency.


While doing the chocolate, we prepped our other ingredients. Here we used an all natural peanut butter from Kraft (the ingredients should only say peanuts), and a banana.



You can chop the banana in small pieces like this.


So for the actual peanut butter cup, you need a silicone type mold (I used a mini muffin silicone mold). First we poured a small layer of chocolate on the bottom, then added a scoop of peanut butter (about a 1/2 tsp to 1 tsp depending on the size of your peanut butter cup). Then we added a slice of banana, and filled the rest in with chocolate again making the top of the cup.


You should then pop it in your freezer for at least 15-20 minutes until the chocolate is solid. They should look like this, and are very delicious! You can store them in your freezer or refrigerator. ^^
